This is the best!! Makes a huge pot. Freeze some for another meal.

2 lbs stew meat
1/4 cup oil
4 cups water
4 cans stewed tomatoes with juice, chopped into quarters
8 potatoes, peeled and quartered
1 can whole kernel corn
4 onions, peeled and quartered
1 can lima beans, drained
1 can green beans, drained
1 can English peas, drained
2 cups whole baby carrots
Salt and pepper
Recipe
Saute meat in oil until brown. Place meat and oil in stockpot and cover with water. Simmer, covered, for 2 hours. Meat will be fork tender. (Do not drain the oil as it seasons the meat)
After 2 hours, add vegetables to pot. Simmer for 1 hour or until potatoes and carrots are tender. This stuff will take lots and lots of salt before it tastes salty, you'll just have to experiment. Serve with cornbread.
