3/4 pounds smoked sausage, cut into 1-inch rounds
16 medium shrimp, peeled, deveined
1/2 red onion, coarsely diced
1 green bell pepper, coarsely diced
1 red bell pepper, coarsely diced
2 tablespoons olive oil
1 pinches salt
1 pinches pepper
1 lemon, juiced
1 packages seasoned rice
Recipe
Prepare seasoned rice according to package instructions. Heat broiler. In a large bowl, toss sausage, shrimp, onion, green bell pepper, red bell pepper, olive oil and salt and pepper to taste. Thread onto eight skewers. Place skewers on a broiling pan and broil 6-8 minutes. Sprinkle with lemon juice and serve with seasoned rice. These kabobs are also great cooked on the grill.
