4 slices bacon
4 eggs
4 thick slices sharp Cheddar cheese
4 slices sweet onion, such as Walla Walla or Vidalia
Salt, pepper
8 pieces of toast
Recipe
Cut bacon into small pieces and fry until crisp in a large skillet. Pour off excess fat.
Distribute the bacon over the bottom of the skillet. Break the eggs over the bacon. As they firm up, break the yolks slightly with a fork. Place a slice of cheese over each egg, then a slice of onion over that. Season with salt and pepper.
Cook slowly over very low heat, until cheese has melted and onion is becoming transparent. Serve between toast.
