CAKE:
2 1/4 c. cake flour
3/4 c. instant malted milk powder
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2/3 c. shortening or butter
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. buttermilk
4 oz (4 1 oz squares) semi-sweet baking chocolate, melted and cooled
Chocolate Malt Icing:
2 Tbsp. butter (do NOT substitute)
2 sq. (1 oz. each) unsweetened baking chocolate
1/2 c. milk
1/2 c. instant malted milk powder
3 1/2 c. confectioners sugar
1 tsp. vanilla
1/4 tsp. salt
Recipe
Cake:
Preheat to 350 . Grease and flour 3 (8-inch) cake pans. In medium bowl combine flour, baking soda and salt (set aside). In larger mixing bowl cream shortening or butter and sugar. Add eggs one at a time and beat until light and fluffy. Beat in vanilla. Add flour mixture alternating with buttermilk. Begin with flour and end with flour. Beat until well combined. Add chocolate and beat until just well mixed. Pour evenly into prepared pans. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove cakes and when completely cooled, frost.
Chocolate Malt Icing:
In small saucepan melt butter and chocolate over low heat. In blender combine milk and instant malted milk powder. In medium bowl combine all ingredients and beat until smooth. Spread on cake.
Notes:
I used chocolate malted milk powder, unsalted butter, large eggs, buttermilk powder and water.
