Cream Cheese Mint

List of Ingredients
1 - 3oz cream cheese, softened to room temperature
3 cups confectioner's sugar
1/4 to 1/2 tsp almond or peppermint extractRecipe
Mix the cream cheese and the extract until creamy.
Add 1-1/2 cups of the confectioner sugar, mix well.
Add remaining sugar and knead until smooth.
Roll into 3/4" inch balls, flatten with a fork. (Or do one of the suggestions above).
Hint: The longer you knead the better the mints will turn out. If the edges start cracking, you haven't kneaded long enough.
Makes about 6 dozen.
