The Best Cheesecake I Ever Made

Crust:
1 1/4 c. graham cracker crumbs
1/4 c. sugar
1/3 c. melted butter or margarine
Preheat over to 350 degrees. Mix above ingredients and press firmly into bottom of springform pan. Bake 6 to 8 minumtes just to set crust.
Filling:
3 8oz.pkgs cream cheese
3/4 c. sugar
2 T. lemon juice (fresh)
1 t. grated lemon zest
3 eggs, lightly beaten
Recipe
Beat cream cheese at LOW speed, adding sugar gradually. Add lemon juice and zest. Add beaten eggs, mixing only until incorporated. DO NOT OVERBEAT...that's what makes all the cracks in the top of some cheesecakes. Pour into crust. Bake at 450 degrees for 5 to 7 minutes. Reduce heat to 250 degrees and bake an additional 30 minutes until set but not browning.
Loosen cake from sides of pan with knofe or spatula. Cool completely on rack. Refrigerate at least 2 hours before removing sides of pan. Top with your favorite topping.
