When Did You Have Time To Do That Chili?
Source of Recipe
gijane
List of Ingredients
2 pound Honeysuckle White® Fresh Thighs
1 cup tomato paste
1 can green chiles (mild is suggested, hotter if you prefer), chopped (4 oz.)
1/4 cup onion, chopped
2 tablespoon Worcestershire sauce
2 tablespoon chili powder
4 to 2 clove garlic, minced
1 can beans - pinto, black, or kidney
Also have on hand
1 jar Salsa of choice
1 cup Grated cheese (cheddar, jack, or combination)
6 flour tortillas (8 inch) (ESPECIALLY if kids are eating)
1 cup sour cream
Recipe
Firstly, you need a crock pot. Otherwise, the irony of the recipe escapes even the best cook.
Rinse turkey, remove skin. Place in crock pot. Top with tomato sauce, chiles, onion, Worcestershire, chili powder garlic and beans. Put the lid on and set to low for 7-9 hours or high, 4-6 hours. Now take off.
To prepare: Remove turkey from crock pot. It should fall off the bone. Remove bone. With two forks, shred turkey. Return to pot. Stir to mix. Spoon into bowls and serve with salsa, cheese, sour cream, and tortillas.
Basically, everything gets thrown into the crock pot in the order given (except salsa, cheese, sour cream, and tortillas), put the top on and walk away. Work a full day, go to softball registration, meet with the volunteer organization, and know that an easy dinner is ready at home (better yet, the cook has an equal opportunity to eat before going to bed).
The tortillas can be used to create a burrito from the chili for the child that is more likely to eat something new when it looks like an entree from a fast-food franchise. The adults can appreciate the tortillas by having something to mop up the chili. Or, as my 9 year old discovered, it's okay to tear up the tortilla and mix it up in the chili. "It kind of tastes like a soggy burrito." Believe me, this discovery was a milestone in dinner meals.
The Added Plus for this Easy Recipe: Using a slotted spoon, place on warmed flour tortillas, top with condiments of choice, roll up and eat like a burrito.
IF THERE ARE LEFTOVERS: Prepare as burritos, with choice of condiments. Roll up and place on a pan and freeze. After frozen, wrap in plastic wrap. The next time the PTA needs you, tell the family to microwave those great turkey burritos for 30-60 seconds and eat without you (as long as they promise to leave something for you).
