Cantonese Fried Rice***

List of Ingredients
3 eggs, beaten
2 teaspoons salt
1 teaspoon dry Sherry or rice wine vinegar
4-5 Tablespoons peanut oil (can use vegetable oil, not olive oil)
4 cups cooked, cold white rice
1 Cup bean sprouts
4 scallions (green onions), cut into 1/2 inch pieces
1/2 cup or more, diced cooked meat (roast pork, shrimp, etc.)
1 teaspoon Chinese brown gravy sauce. (Kikkoman makes a brown gravy sauce or you can make your own)
Brown Gravy Sauce Ingredients:
1 cup soy sauce
4 Tablespoons sherry
1 Tablespoon sugar
1-1/2 Tablespoons chopped onion
1 Tablespoon lemon peel
3 Slice of ginger root or shavings
1/2 cup chicken stock.
Recipe
Fried Rice directions:
Beat eggs with salt, sherry or rice wine vinegar.
Heat oil in pan over medium high heat. Scramble eggs until dry and break into small pieces. Remove from pan.
In remaing oil, add meat to pan and stir fry until heated through. Add rice and brown gravy sauce. Stir constantly until well blended and heated.
Return eggs to pan; add bean sprouts and scallions; stir well. Serve.
Brown gravy sauce directions:
Heat and simmer the ingredients together for 15 minutes stirring occasionally. Keep in a bowl for use.
