# 6 unpeeled, large fresh shrimp
# 3/4 lb. ground pork
# 1/4 cup finely chopped water chestnuts
# 1/4 cup finely chopped green onions
# 2 large eggs, lightly beaten
# 2 Tbsp chopped fresh cilantro
# 1 small clove garlic, minced
# 1 tsp salt
# 1-1/2 (16-ounce) pkgs. wonton wrappers (96 wrappers)
# 3 cups vegetable oil

# Peel shrimp and devein, if desired. Finely chop shrimp. Add shrimp, pork, water chestnuts, green onions, eggs, cilantro, garlic and salt to a food processor; pulse 5 times or until blended.
# Spoon one rounded teaspoonful pork mixture into center of each wonton wrapper; moisten edges with water. Fold wonton in half to form a triangle, pressing edges together to seal.
# Pour oil into a large Dutch oven; heat to 375º F. Fry wontons, in batches, 1 minute or until golden, turning once. Drain on paper towels. Serve with hot mustard and sweet-and-sour sauce.
