Arroz con Queso

List of Ingredients
1 1/2 cups converted long grain rice
1 (14 1/2) ounce can crushed tomatoes
1 (15 ounce) can mexican style beans
3 garlic cloves, minced
1 onion finely chopped
2 tablespoons vegetable oil
1 cup cottage cheese
1 (4 ounce) can diced green chiles, drained
2 cups monterey jack cheese, grated
Recipe
Mix thoroughly all ingredients except 1 cup of the grated cheese.
Cover and cook on low 6 to 9 hours.
Just before serving, sprinkle with remaining grated cheese.
Makes 6 to 8 servings.
