Cheesy Pizza Casserole

List of Ingredients
1 1/2 Cup Pepperoni, sliced about 35 slices
2 Teaspoon Butter
1 Cup Onion,chopped
16 Ounce Tomato Sauce
10 Ounce Mushrooms, sliced
1 Teaspoon Oregano, leaves
1 Teaspoon Basil, leaves
2 Cup Pasta Shells, small to medium small works best, but you can use medium
3 Tablespoon Parmesan Cheese, grated
3 Cup Mozzarella Cheese, shredded Recipe
Combine pepperoni w/ 1 1/2 C. water in a pan. Bring to a boil. Simmer for 4-5 min and drain. Melt butter in a skillet. Add onion and saute till soft. Add tomato sauce, mushrooms, oregano and basil. Stir and remove from heat. Cook pasta according to package directions. Drain and turn into a 3 qt or 9x13 pan. Add parmesan and toss to coat. Sprinkle w/ 1C mozzarella. Scatter pepperoni over top. Cover w/ tomato-onion sauce. Sprinkle w/ remaining 2 C. mozzarella.
Freeze:
Cover unbaked casserole. Label and freeze.
Serve: Thaw. Bake uncovered at 350 degrees for 30 min till bubbly and lightly browned.
