2 pounds leftover cooked chicken, minced
1 cup cracker crumbs
1/3 cup mayonnaise
1 chopped green onion, (scallion type)
salt and pepper to taste
Oil for frying Recipe
Mix together the chicken, crumbs, mayonnaise, onion
and seasonings. Make into flat patties approximately
2 inches wide and 1/2 inch thick.
Heat the oil in a skillet. Add the cakes and brown on
both sides. Drain on paper towels. Serve warm.
Makes 3 - 4 servings.
