1 pound ground beef
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (7 ounce) can vacuum packed whole kernel corn, drained
1/2 cup water
1 (1 1/4 ounce) package taco seasoning mix
1 cup Martha White Buttermilk Self-Rising Corn Meal Mix
1/2 cup milk
2 tablespoons oil
1 egg
1 cup shredded cheddar cheese
Recipe
Preheat oven to 400 degrees. Grease an 8 inch square glass baking dish or shallow 2 quart casserole.
Brown ground beef in skillet over medium high heat until thoroughly cooked, stirring frequently. Drain.
Add tomatoes, corn, water and taco seasoning mix; mix well. Bring to a boil, stirring occasionally. Pour into greased baking dish.
In a small bowl, combine corn meal mix, milk, oil and egg; blend well. Stir in cheese. Pour batter over ground beef mixture in baking dish.
Bake at 400 degrees for 30 to 35 minutes or until topping is golden brown.
