    Chicken Enchilada Casserole

    1 cup chopped onion
    2 tablespoons vegetable oil
    1 tsp chili powder
    1 tsp ground cumin
    8 oz cream cheese
    3/4 cup salsa
    8 oz shredded cheddar cheese
    2lbs cooked, shredded chicken breast
    1/4 cup chopped black olives
    6 round flour tortillas (fajita size)
    1 can red enchilada sauce

    Preheat oven to 350. In large saucepan, cook onions in oil. Add spices and cream cheese over low heat until melted. Add shredded chicken and salsa. Stir 2-3 minutes, remove from heat. Stir in 1 cup shredded cheese and black olives. Pour a small amount of enchilada sauce on the bottom of a 2 qt casserole dish. Next place 2 tortillas, 1/2 chicken mixture, sprinkle with some cheese. Repeat this process and place two last tortillas on top. Pour the rest of the enchilada sauce on top and sprinkle with remaining cheese. Bake for 25 minutes.
