Fiesta Mexican Casserole*

1 cup White Rice
1 lb. Ground Beef
1/4 cup Onion, chopped
1 tsp. Garlic Powder
Salt and Pepper to Taste
1 can (4 oz) Chopped Green Chilies
1 can (10 oz) Diced Tomatoes and Green Chilies (Hot or Mild, to taste)
1 can (10 ¾ oz) Cream of Mushroom Soup
1/4 cup Milk
1 can (10 oz) Enchilada Sauce
1/4 lb Pasteurized American Cheese product, diced
2 cups Coarsely crushed, Tortilla Chips
1 pkg (16 oz) Mexican Four-Cheese, shredded
Recipe
Serves: 4
1) Preheat oven to 350° F. Prepare rice according to package directions.
2) In a medium skillet, brown ground beef with chopped onion, garlic, and salt, pepper (to taste). Drain and set aside.
3) In a large bowl, combine green chilies, diced tomatoes and green chilies, soup, milk, enchilada sauce, and diced American cheese. Add prepared rice and stir. Add cooked ground beef mixture and stir.
4) Spray a 9 x 13 baking dish with cooking spray. Layer crushed tortilla chips in the pan and cover with prepared mixture. Top with a few more crushed tortilla chips. Bake for 30-minutes, or until bubbly. Sprinkle with shredded Mexican Four-Cheese and serve.
