    Mexican 'Everything' Casserole

    2lb ground beef
    10 oz. mozzarella cheese grated
    1 can enchilada sauce
    1 can taco sauce
    1 10 oz can chicken mushroom soup
    1 10.75 oz can cream of chicken soup
    1 can canned chopped green chilies
    1 diced medium onion
    1 corn tortillas
    1 block Cheddar cheese

    Recipe



    1. Brown ground beef in skillet. Drain and set aside.

    2. Mix all soups, sauces, and chilies in another skillet. Simmer until hot. Dip tortillas in sauce, set aside.

    3. Layer bottom of large casserole dish with tortillas. Add a layer of beef (1/2 of it). Sprinkle with onions. Top with 1/2 of both cheeses. Add another layer of tortillas. Add rest of beef and onions. Top with rest of cheeses.

    4. Pour the rest of the sauce on top. Bake at 350° for 20 to 25 minutes. Serves 8-10.

    5. Cook's Notes: I usually make two of these at the same time to cook one and freeze the other one.
