    Nonstick cooking spray
    2 teaspoons olive oil
    1 medium onion, peeled, diced
    1 can (15 oz.) red kidney beans, black beans or pinto beans
    2 cups fat free chicken broth
    1 cup long grain white rice
    1 can (14.5 oz.) stewed tomatoes
    ¼ cup lentils
    ½ cup chopped cilantro
    1 medium red bell pepper, washed, cored, diced
    1 teaspoon chili powder
    ½ teaspoon ground cumin
    2 tablespoon canned green chilies, chopped

    Recipe



    1. Spray a large (3-qt.) nonstick saucepan with cooking spray. Add oil and heat over medium high heat. Add onion and cook until just tender, about 3-4 minutes.

    2. Add beans, broth, rice, tomatoes, lentils, cilantro, red pepper, chili powder, cumin and chilies. Bring to a boil, cover, reduce heat to simmer and cook until rice and lentils are tender and all liquid has been absorbed, about 20-25 minutes. Serve immediately.
