1 cup olive oil
1/2 cup red wine vinegar
5 Roma tomatoes, chopped
1 bunch cilantro, chopped
1 bunch green onions, chopped
1 Tbsp chopped garlic
1/8 tsp pepper flakes
1 fresh jalapeno, seeds removed and finely diced
3 lbs. shrimp, cooked with tail on
Recipe
In a large bowl, mix marinade ingredients. Add shrimp and marinate, covered, in refrigerator for 8 to 12 hours.
