SALSA CHICKEN

List of Ingredients
5 whole (10 to 12 half) chicken breasts
1 tsp. pepper
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 of a 15 oz. can tomatoes
1 C. salsa
1 onion, chopped
2 tsp. salt
1 bay leaf
1/2 c. chicken stock
12 corn tortillas, torn
1 1/2 c. sharp cheddar cheese
salt and pepper to taste
Recipe
In covered pot, boil the chicken with salt, pepper and bay leaf for about 1 to 2 hours (until chicken starts to fall off bones). Save 1/2 cup stock. Tear chicken in bite-size pieces. Mix tomatoes, chicken stock, soups, salsa. Add salt and pepper to taste and stir well. In a 3 quart casserole, alternate layers of tortillas, chicken, tomato mixture, chopped onion and cheese. Bake at 350 degrees for 45 minutes. Makes 6 to 10 servings.
