Baked Potato Skins

4 med. russet potatoes
1/4 c. butter, melted
1/3 c. sour cream
1 1/2 c. shredded Cheddar cheese
1 tsp. snipped chives or green onion tops
5 slices bacon, cooked and crumbled
Recipe
Preheat oven to 400.
Bake potatoes in microwave until they are soft, or in oven for 1 hr.
As potatoes are baking, make sour cream dip by mixing sour cream and chives or onions. Mix together and place in refrigerator to chill.
When the potatoes are cool enough to handle, make 2 lengthwise cuts thru each potato, resulting in 3 slices that are 1/2" wide. Discard the middle slices or save for mashed potatoes. This will leave you with 2 potato skins from each potato (8 in all).
With a spoon scoop out most the potato from the skin, leaving about 1/4" of potato in the skin. Brush the entire surface of the potato, inside and out, with the melted butter.
-Place the skins on a cookie sheet, cut side up.
-Turn the oven temperature up to broil.
-Broil for 6-8 mins.
-Place 2-3 T. of cheese on each skin.
-Sprinkle with 2 tsp. of bacon.
-Broil the skins for 2 more mins., or until the cheese is melted.
-Serve hot on a plate, with sour cream dip in the middle of the plate.
-Makes 2 servings
