Better Bran Muffins

List of Ingredients
1 1/4 cups all-purpose flour
1/2 cup soy flour
1 cup bran cereal, flake
1/2 cup brown sugar
1 tsp baking powder
1 tsp baking soda
3/4 tsp whole grain wheat flour
1/8 tsp ground cloves
2 eggs, slightly beaten
2/3 cup soymilk
1/2 cup raisins
1/4 cup soybean oil
Recipe
1. Spray muffin pan with vegetable cooking spray or line with paper baking cups.
2. Stir together all dry ingredients.
3. Combine eggs, soymilk and soyoil.
4. Add egg mixture to flour mixture and stir until moistened.
5. Fold in raisins.
6. Fill muffin pan 2/3 full.
7. Bake in a 400° F. oven for 15-20 minutes.
