Fat Free Carrot Muffins

2 1/4 cups flour
1/3 cup brown sugar
1 tsp cinnamon
1 tsp vanilla
1/2 tsp baking powder
3 grated carrots
8 oz. non-fat vanilla yogurt
1/2 cup egg substitute
1/2 cup sugar
1 tsp baking soda
1/4 tsp ginger
1/2 cup raisins
1/2 cup unsweetened applesauce
Recipe
Mix dry ingredients together. Mix liquid ingredients, combine; mixing only until all ingredients are moist.
Pour into greased jumbo muffin cups. Bake at 350 for 30 minutes.
Makes 6 jumbo muffins.
