PAM® No-Stick Cooking Spray
1 (16-ounce) can sliced peaches in heavy syrup, diced, syrup reserved
1/3 cup WESSON® Vegetable Oil
2 eggs, slightly beaten
1 teaspoon vanilla
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup KNOTT'S BERRY FARM® Peach Preserves
Sugar for topping
Recipe
Preheat oven to 400°F. Spray 12 muffin cups with PAM® Cooking Spray. In a small bowl, combine syrup, Wesson® Oil, eggs and vanilla; mix well. In a large bowl, mix together flour, sugar, baking powder and salt. Pour egg mixture into flour mixture; stir just until dry ingredients are moistened. Fold in diced peaches. Fill muffin cups to rim. Bake for 15 to 22 minutes or until wooden pick inserted into center comes out clean. Cool 5 minutes. Remove muffins to wire racks. Brush with Knott's® preserves and sprinkle with desired amount of sugar.
