Cinnamon Apple Waffles

1¼ cups unbleached all-purpose flour
¾ cup quick-cooking rolled oats
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
1 cup buttermilk
2 large eggs, separated
½ cup unsweetened applesauce
2 tablespoons butter, melted
2 tablespoons light brown sugar
Butter and maple syrup for topping
Recipe
In a large bowl, mix the flour, the oats, baking powder, baking soda, and the cinnamon.
In a medium bowl, whisk the buttermilk, egg yolks, applesauce, melted butter, and brown sugar until they're well blended.
Stir the buttermilk mixture into the dry ingredients until just evenly moistened and let stand for 5 minutes.
In a small bowl, beat the egg whites with an electric mixer until soft peaks form when the beaters are lifted.
With a rubber spatula, gently fold the egg whites into the batter just until combined.
Heat a waffle iron and lightly grease the grids of the iron.
Pour 1/2 to 2/3 cup of batter into the center of the grids, spreading the batter almost to the corners.
Close the lid and bake according to the manufacturer's instructions or until the iron opens easily.
Place the waffles on warm serving plates and top with butter and maple syrup.
