Spicy Apple Pancakes with Cider Sauce

2 cups biscuit mix
1/2 teaspoon cinnamon
1 egg
1 1/3 cups milk
3/4 cup apple (about 2 medium) -- grated
Cider Sauce:
1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups apple cider
2 tablespoons lemon juice
1/4 cup butter or margarine Recipe
Beat baking mix, cinnamon, egg and milk with rotary beater until smooth. Stir in apples. Grease griddle if necessary and pour batter by 1/4-cup measure onto hot griddle. Bake until bubbles appear, turn and bake other side until golden brown. Serve with warm cider sauce; if desired, top with sour cream.
Yield: 18 4-inch pancakes.
Sauce: In saucepan, mix sugar, cornstarch, cinnamon and nutmeg; stir in cider and lemon juice. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Remove from heat and stir in butter.
Yield: about 2 1/2 cups.
