CHICKEN WITH SHRIMP

2 TBS butter
2 TBS oil
12 pieces chicken
Salt, pepper
3 onions, chopped
2 cloves garlic, chopped
2 TBS flour
1 (1 lb) can tomato sauce
1 C red wine
2 tsp basil
2 tsp oregano
3 tsp minced parsley
1 tsp salt
1 tsp sugar
1/4 tsp pepper
1 lb. raw shrimp, shelled and deveined (or fully thawed raw shrimp)
Recipe
In casserole, heat butter and oil. Brown chicken pieces and season. Remove.
In remaining fat, cook onion and garlic until translucent. Add flour, stirring to blend mixture well.
To contents of casserole, add tomato sauce, wine and seasoning; cook, stirring, until sauce thickens somewhat. Replace chicken and spoon sauce over. Bake, covered, at 350° F. for 1 hour or until chicken is tender.
Add shrimp on top of casserole, cover, and continue to cook at 350° F. for 15 minutes or until shrimp turn pink.
Serve over pasta or rice.
