Linguine with Mixed Sweet Peppers

List of Ingredients
1 lb(s) Linguini
1 cup(s) Red bell peppers, cut 1" x 1"
1 cup(s) Yellow bell peppers, cut 1" x 1"
1 cup(s) Plum tomatoes, seeds & jelly removed, cut 1" x 1"
4 Medium garlic cloves, peeled and finely chopped
4 Tbsp Fresh basil, finely chopped
3 Tbsp Extra virgin olive oil
1/2 cup(s) Parmesan cheese, freshly grated
Recipe
- Cut vegetables as directed.
- Bring two quarts of lightly salted water to a slow boil.
- Preheat heavy skillet over medium heat; add olive oil and sauté garlic until just white.
- Add all the ingredients (except pasta and Parmesan cheese) and sauté, stirring constantly until the peppers are crisp tender.
- Simultaneously cook pasta three minutes in rapidly boiling water, or according to package directions.
- Remove the cooked pasta from the heat and drain thoroughly.
- Add the pasta and Parmesan cheese to the sauté pan; blend well with the vegetables.
- Add salt and fresh ground pepper to taste; serve immediately.
