Sally Struther's Portland Peach Pie

2 cups milk
2 eggs
1/2 cup sugar
3 Tablespoons cornstarch
dash of salt 1/2 teaspoon vanilla
pat of butter
4-6 peaches, cut into thick slices
graham cracker crust

In a medium saucepan, mix milk and eggs with a beater. In a separate bowl, combine sugar, cornstarch and salt. Slowly pour the dry ingredients into the egg mixture and stir with a wooden spoon. Cook over medium heat, stirring constantly until the mixture boils and thickens. Remove from heat, add the vaniilla and butter and let cool. Arrange the peach slices in the crust. Pour the cooled mixture over them. Cover with whipped cream and store in the refrigerator until set.
