    1 9" deep dish pie shell

    LEMON FILLING:
    1 1/2 cups sugar
    6 Tbls. cornstarch
    1/2 tsp salt
    1 1/4 cups water
    2 Tbls. margarine
    2/3 cup lemon juice
    4-5 drops yellow food coloring

    CREAM CHEESE FILLING:
    1 (8oz) pkg. cream cheese
    1 (4oz) pkg. cream cheese
    3/4 cup powdered sugar
    1 1/2 cups cool whip
    1 Tbls. lemon juice

    Line the pie shell with foil and bake @ 450 for 8 minutes. Remove foil and bake 5 more minutes.


    Cool crust.


    In a sauce pan combine the sugar, cornstarch and salt. Stir in the water, bring to a boil over medium high heat.


    Reduce heat; cook and stir for 2 minutes.


    Remove from heat; stir in butter and food coloring.


    Gently stir in the lemon juice.


    Cool to room temperature ( at least one hour )


    In another mixing bowl beat the cream cheese and sugar until smooth. Fold in the cool whip and lemon juice.


    Spread cream mixture into prepared pie crust.


    Top with the lemon filling.


    Refrigerate over night.


    Store in frig.
