Herbed Potatoes

1 lb baking potatoes (3 medium)
2 tbsp. butter, melted
1 tbsp. lemon juice
1 tbsp. snipped fresh basil or fresh thyme
1/4 tsp. black papper
1/3 cup shredded cheddar cheese

Lightly grease a 15x10x1 inch baking pan; set aside. Scrub potatoes with a brush. Pat dry. Cut potatoes crosswise into slices a little more than 1/4 inch thick. In a large bowl, combine butter, lemon juice, basil and black pepper. Add sliced potatoes; toss gently to coat. Place potatoes in a single layer in prepared baking dish. Bake in a 450 degree oven for 25 to 30 minutes or until tender and bottoms lightly browned. Remove from oven. Sprinkle with cheese. Let stand 5 minutes. Transfer to paper towels to drain. Serve warm.
