Easy Enchilada Casserole

2 Lbs. ground beef
1 small onion, diced finely
1 small can diced green chilis
3 cloves fresh garlic, minced
1 can Cream of Mushroom soup
1 can RED enchilada sauce (14-15 oz)
shredded cheddar cheese
corn tortillas, cut into small pieces
Recipe
Brown and drain meat. add onion and garlic and cook until translucent. Add chilis, soup and sauce. Mix thoroughly.
Starting with tortillas, make a layer in a 9 X 13 sprayed baking dish. Add a layer of meat , then cheese. repeat until all is used, ending with cheese.
Bake at 350 for 35 minutes.
I serve this with red rice and refried beans. Garnishes...sour cream, diced green onions, sliced black olives.
