Velveeta® 15 Minute Cheesy Chicken & Veg

List of Ingredients
1 tablespoon oil
4 small boneless skinless chicken breast halves (about 1 pound)
1 can (14-1/2 ounces) chicken broth or 1-3/4 cups water
2 cups MINUTE® White Rice, uncooked
1 package (16 ounces) frozen vegetable blend (such as broccoli, cauliflower and carrots), thawed, drained
3/4 pound (12 ounces) VELVEETA® Pasteurized Prepared Cheese Product, cut up
Recipe
1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet.
2. Add broth to skillet. Bring to boil.
3. Stir in rice, vegetables and VELVEETA. Top with chicken; cover. Cook on low heat 5 minutes. Stir until VELVEETA is melted.
Note Increase oil to 2 tablespoons if using regular skillet.
