    Maraschino Cherry Loaf

    1/4 cup butter, softened
    1 cup sugar
    1 egg
    2/3 cup milk
    1/3 cup maraschino cherry juice
    1 teaspoon almond extract
    2 cups flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup chopped walnuts
    2/3 cup chopped maraschino cherries

    Recipe



    Combine butter, sugar and egg in mixing bowl. Beat until smooth. Add milk, juice and flavoring. In a separate bowl combine flour, baking powder and salt. Stir in nuts and cherries. Pour into liquid mixture. Stir only enough to moisten all ingredients. Spoon into greased 9x5x3 inch loaf pan. Bake in 350ºF oven. Test for doneness 45 minutes onward. Let stand 10 minutes. Turn loaf out onto rack to cool. Store in plastic bag. Note: I found that I needed to cook my loaf for 55 minutes.
