    DRESSING:Cucumber Dressing

    1 English cucumber, seeded and chopped
    1 tbsp sherry vinegar
    3 tbsp extra-virgin olive oil
    1 tsp prepared mustard
    1/2 tsp sugar
    1/2 tsp fine sea salt
    1/2 tsp pepper

    Recipe

    1. Place all the ingredients in a food processor or blender and process until very smooth.
