SALAD:ORIENTAL CHICKEN SALAD

Ginger Dressing (below)
1/2 head lettuce
1 medium carrot
4 green onions
1 package crunchy chow mein noodles
3 cups cut-up cooked chicken
1 Tbsp sesame seeds, toasted
Recipe
Prepare ginger dressing. Shred lettuce and carrot. Cut onions into slices.
In salad bowl, mix lettuce, carrot, onion and chicken. Pour ginger dressing over. Toss with half of the chow mein noodles. Spoon salad over remaining noodles. Sprinkle with sesame seed.
6 servings.
*Note: for something different, i also add fresh chinese snow peas.
GINGER DRESSING
1/3 cup vegetable oil
1/4 cup white wine vinegar
1 Tbsp sugar
2 tsps soy sauce
1/2 tsp pepper
1/2 tsp ground ginger
1/4 tsp salt
Shake all ingredients in tightly covered container. Refrigerate at least 2 hours.
