PAS SALAD: MACARONI-EGG SALAD

1 lb. salad macaroni
12 green onions, thinly sliced (including tops)
4 hard-cooked eggs, chopped
1 c. thinly sliced celery
12 slices crisply cooked bacon, crumbled
1 (4 oz.) jar sliced pimentos, drained
1 c. chopped dill pickle
1 1/2 c. mayonnaise
1 Tbsp. prepared horseradish
2 tsp. prepared mustard
1 Tbsp. dill pickle juice (optional)
salt and pepper
Recipe
Cook macaroni according to package directions; drain
well, rinse in cold water and drain again. Turn macaroni into a large salad bowl. Add onion (reserving some green tops for garnish), eggs, celery, bacon, pimento and pickle. Combine mayonnaise, horseradish, mustard and pickle juice (if used); blend well. Stir into macaroni mixture; season to taste with salt and pepper and garnish with reserved onion tops. Cover and chill for 4 to 6 hours. Makes 10 to 12 servings.
