    POT SALAD: Picnic Potato Salad

    List of Ingredients




    8 cups water
    2 tsps salt
    8 cups quartered small new red potatoes
    2/3 cup sour cream
    2/3 cup mayonnaise
    2 T chopped fresh parsley
    2 T country-style Dijon mustard
    1 tsp finely chopped fresh garlic
    1 tsp dried dill weed
    1/2 tsp salt
    1/2 tsp pepper
    1/4 cup sliced green onion
    8 slices crispy cooked bacon, crumbled

    Recipe



    Bring water and 2 tsps salt to a full boil in 6 quart saucepan; add potatoes. Cook over high heat until potatoes are tender (12 to 15 minutes). Rinse with cold water. Drain.

    Combine all remaining ingredients except bacon and green onions in large bowl. Add potatoes; toss to coat. Cover; refrigerate until serving time (1 to 2 hours). Just before serving, sprinkle with bacon and green onion.
