    SALAD:Roast Beef Salad with Mustard Vinaigrett

    List of Ingredients

    1/2 lb. canned beets, drained
    3/4 lb. canned green asparagus spears, drained
    1/4 lb. canned artichoke hearts, cut into quarters
    1/3 cup plus 3 Tbs. snow peas, rinsed
    8 precooked slices roast beef
    3 Tbs. plus 1 tsp. olive oil
    2 Tbs. balsamic or malt vinegar
    1 tsp. Dijon mustard
    1/8 tsp. sugar
    salt and pepper

    Recipe

    Place beets, asparagus, artichokes, and snow peas in a serving bowl. Top with roast beef slices. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Drizzle dressing over salad and serve immediately.
