SALAD: Tortellini Pesto Salad

2 packages tortellini, 9-ounces each
2 tbs olive oil
1/2 red bell pepper, sliced
3 Roma tomatoes, diced
1/2 red onion, sliced thinly
2-3 tbs pesto
1/2 c peeled, diced cucumber
4-5 sun-dried tomatoes, chopped
2 fl oz white wine vinegar
1/2 tsp salt, or to taste
1/2 tsp freshly cracked black pepper
Recipe
Cook tortellini according to package directions; drain. Cool and toss with olive oil. Combine vinegar, salt, and black pepper in a large bowl; stir well. Add red peppers, yellow peppers, tomato, pesto, onions, and tortellini; toss gently to coat. Cover and store refrigerated or serve right away. You might find you need more dressing. Sometimes the amount I give comes out dry. So be ready to play it by ear.
