Cucumber, Tomato & Onion Salad***

List of Ingredients
4 medium tomatoes, each cut into 8 wedges (about 3 cups)
2 medium cucumbers, thinly sliced
1 medium Walla Walla Sweet Onions, cut into wedges
2 tablespoons white wine vinegar
½ cup olive oil
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped parsley
½ teaspoon salt
½ teaspoon freshly ground pepper
¼ pound goat cheese
Recipe
In large glass serving bowl, combine tomatoes, cucumbers, and onions.
Mix together vinegar, olive oil, dill and parsley.
Season to taste.
Toss vinegar- oil mixture over vegetables.
Cover; refrigerate 1 hour to blend flavors.
Toss again just before serving.
Blend in goat cheese.
