Fried Lemon Battered Fish Fillets

1/3 cup club soda
3 teaspoons plus 1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1/2 cup flour
1/2 teaspoon salt
fresh ground black pepper -- to taste
1 pound fish fillet -- walleye, snapper or tilapia
3 teaspoons olive oil
3 teaspoons butter
Recipe
Mix club soda, lemon juice, Worcestershire, flour, salt and pepper in a shallow dish. Rinse fillets under cold running water, drain, pat dry with paper towels and set aside. Heat olive oil and butter in a large skillet over medium high heat. Dip fillets in batter then place in skillet. Fry until lightly browned and crisp on both sides, about 3 minutes per side.
