Poached Salmon with Horseradish

1/2 cup mayonnaise, or lowfat mayonniase
1/2 cup plain yogurt, or lowfat yogurt
1 Tbs. plus 1 tsp. prepared horseradish
1 tsp. fresh lemon juice
1 Tbs. plus 1 tsp. chives, chopped
2 quarts water
2 lemons, sliced
2 carrots, sliced
2 celery stalks, sliced
2 tsp. black peppercorns
2 bay leaves
1/4 tsp. salt
2 lbs. fresh salmon fillets
Recipe
Whisk first 5 ingredients together in a bowl and chill. Place next 7 ingredients in a large skillet and bring to a boil. Reduce heat and simmer for about 10 minutes. Add the salmon and simmer for about 10-12 more minutes. Transfer to a serving platter and serve with chilled horseradish sauce.
