Asian Sesame Tuna Skewers

-- Marinade --
1/2 cup lite soy sauce
1/4 cup firmly packed brown sugar
1 Tbsp minced garlic
2 tsp grated fresh ginger
1 tuna steak (1 lb.), cut into 3/4-inch cubes
1 Tbsp Asian sesame oil
2 Tbsp white sesame seeds
2 Tbsp black sesame seeds*
Wooden skewers or long toothpicks
Lite soy sauce, pickled ginger, wasabi paste,* for garnish, optional
Recipe
Make marinade: Combine all marinade ingredients in a large resealable plastic storage bag. Seal bag and knead until all ingredients are thoroughly mixed. Add tuna and re-seal bag. Marinate in the refrigerator 1 hour.
Drain tuna and pat dry; transfer to a large bowl and toss with sesame oil until coated. Spread white and black sesame seeds separately on two sheets of waxed paper. Dip one side of each piece of tuna in white, then black seeds; transfer to a cookie sheet.
Heat a large, non-stick skillet over high heat until hot. Add half of tuna to skillet and spread out to a single layer. Cook 1 to 2 minutes, until seared on outside, but still translucent in center, turning once. Remove to a plate. Repeat with remaining tuna.
Thread two pieces of tuna on each skewer. Serve with soy sauce. Garnish with pickled ginger and wasabi paste, if desired.
Makes about 30 skewers.
* Can be found in the ethnic section of supermarkets or Asian specialty stores.
