California Cheese Soup

1 Quart Water
2 Chicken Bouillon Cubes
1 Cup Celery, diced
� Cup Onion, diced
2 � Cups Potatoes, peeled and diced
1 Cup Carrots, diced
16 Oz. Frozen California Blend Vegetables
2 Cans Condensed Cream of Chicken Soup, undiluted
1 Lb. Velveeta, cut into cubes
Recipe
Bring water to a boil in a large stock pot; add next six ingredients. Reduce heat and simmer, covered, until all vegetables are tender, about 30 minutes.
Stir in soups and cheese; cook until soup is heated through and the cheese is melted.
YIELD: 3 Quarts (10-12 servings)
