Cauliflower and Broccoli Cheese Soup

List of Ingredients
4 chicken bouillon cubes
6 cups water
1/2 onion, chopped
2 to 3 cups potatoes, peeled and cubed
1 bag cauliflower and broccoli florets mix
1 pound cubed Velveeta Lite cheese
2 10.75 oz can cream of chicken soup
Recipe
1. Boil water, bouillon cubes, onion and potatoes together for approximately 30 minutes.
2. Cut cauliflower and broccoli florets into bite-sized pieces if necessary.
3. Add florets and undiluted cream of chicken soup cans to soup base. Stir in cubed velveeta cheese until it melts. Serve immediately.
Cook's Notes: Try serving this soup with crispy toast triangles.
