1/2 lb Parmigiano Reggiano
1/2 lb Asiago
2 tablespoons choped green onion
2 cloves garlic
2 teaspoon dried oregano
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 1/2 cups Extra Virgin Olive Oil
Recipe
Chop cheese to rough cubes. Place in food processor and pulsate to small pea-like texture. Add all remaining ingredients EXCEPT olive oil and pulsate to combine. Add olive oil and blend about 30 seconds. Place in airtight serving bowl and leave at room temperature 4 hours before serving.
Serving suggestion: serve with homemade crostini bread.
