Peach Pancake Topping

11 ounces canned peaches
1 Tbs. plus 1 tsp. honey, or corn syrup
1/4 tsp. ground cinnamon
1 Tbs. plus 1 tsp. cornstarch
2 tsp. water
Recipe
Coarsely chop peaches, reserving juice. In a saucepan, mix peaches and juice with honey and cinnamon. Dissolve cornstarch in water; add to peaches.Heat on medium heat until mixture boils and thickens, about 4-5 minutes. Spoon about 1/3 cup over hot pancakes.
