Sautéed Sugar Snap Peas

1/2 lb. sugar snap peas
1 Tbs. butter
salt and pepper, to taste Recipe
In a pot of salted boiling water, blanch the snap peas for 1 minute. Plunge the peas into ice water. Drain well.
Heat butter in a sauté pan to sizzling. Toss the peas in the butter. Sauté quickly.
Season with salt and pepper.
Yield: 4 servings
