Tarragon Roasted Asparagus

1 lb. asparagus
1 Tablespoon vegetable or olive oil
2 teaspoons salt
black pepper
4 sprigs tarragon, chopped
1 lemon
Recipe
1. Cut the woody base (approximately 1 inch) off the asparagus spears.
2. Toss the asparagus in a bowl with the oil, salt, and pepper.
3. Lay asparagus in a single layer on a cookie sheet and roast in a 350°F oven for 30-35 minutes.
4. Squeeze lemon over asparagus, sprinkle with chopped tarragon, and serve.
