Spicy Tomato Cocktail

2 lbs. tomatoes, peeled, seeded and chopped
2 cucumbers, peeled, seeded and chopped
1 Tbs. lemon juice
1/2 tsp. hot red pepper sauce
4 celery ribs, leaves reserved, trimmed, strings discarded and cut into 1 inch pieces
1/2 tsp. salt
1 tsp. sugar
4 scallions, white part only, chopped
1 tsp. ground ginger
Recipe
Bring tomatoes to a boil in a covered heavy non-reactive saucepan over medium heat. Remove from heat. Transfer tomatoes to a bowl. Place bowl in cold water to cool tomatoes. Combine next 3 ingredients in a blender or food processor. Purée until smooth. Add celery pieces and continue to purée. Add tomatoes and remaining ingredients (except celery leaves). Season with salt and pepper to taste. Process mixture until very smooth. Chill before serving. Garnish with celery leaves, if desired.
